Savory Appe

Appe/Appos,the most favorite breakfast in my family,is a South-Indian delicacy. They can be sweet or savory,the sweet ones are usually made as an offering to God during pooja. I like to make my own appe batter at home....soaking,grinding,fermenting et al. Appe are made in a special girdle called "appe kayili". It has sockets in which appe batter is poured and cooked.
Lets start with making the appe batter. Boiled rice,split black lentil(urad dal) and fenugreek seeds are soaked for 6to8 hours. They are ground together with soaked beaten rice(poha).
This batter is kept covered in a warm place for 12 hours/overnight. It ferments to form a fluffy and airy mixture.
Now the appe kayili is coated with oil and kept on a low flame. After it becomes warm,appe batter is poured into the sockets till they are 3/4th full. The kayili is covered to let the appe cook.
Once they turn brown at the edges,they are flipped with a wooden skewer to let the other side cook.
After they become nice and crispy brown on both sides,they are removed from flame and served with coconut chutney/tomato ketchup.

Ingredients

10 mins
24-number
  • 1/2 cuprice boiled
  • 1/4 cuplentil split black (urad dal)
  • 1/4 cuprice beaten (poha)
  • 1 tspfenugreek seeds (methi )
  • to tastesalt
  • oil for coating the appe girdle

Steps

    Wash boiled rice and split black lentil along with fenugreek seeds.

  2. 2

    Soak them in water for 6to8 hours.

  3. 3

    Now wash beaten rice(poha) and drain away the water.

  4. 4

    Grind everything together.

  5. 5

    Add water gradually while grinding,till this batter gets a thick dropping consistency.

    Keep the batter covered in a warm place for 12 hours/overnight.

    The batter ferments to form a light and fluffy mixture.

    Next day in the morning stir the batter gently and add salt.

    Coat the appe girdle with oil and keep it on a low flame.

    Pour batter in the sockets of appe girdle.

    Cover and cook till the edges become brown.

    Flip the appe with a wooden skewer and cook the other side till its crispy and brown.

    Take the girdle off the flame.

    Serve these steaming hot appe with coconut chutney/tomato ketchup.

I have been to see the snow-capped mountains of Himalayas, the serene ocean at land's end Kanyakumari, the devout Jain temples of Gujrat,the intricate carvings at Badami-Hampi,sea-shores of Karde-Harne, the dreamy backwaters of Kerala.......this is an endless list! I relished the food everywhere I went and came back with loads of memories....I experimented in my own kitchen,trying to recreate these flavors. Few recipes need to be made in their traditional way,few could be modified to adapt to our busy urban lifestyle.Cook Bake and Grill is an attempt to present this culinary journey of mine to you.... As I continue to travel and recreate diverse flavors in my kitchen,I will keep u all updated! Welcome aboard!
