Pearl Barley Porridge Sugar Free

Barley is a whole grain like wheat, oats and quinoa. Barley has some impressive health benefits. A very high fiber content, vitamins and minerals, antioxidants, heart health and diabetes protection are just some of the barley nutrition benefits that make it one of the best whole grain choices. Pearl barley can be found in many groceries, I bought the Nature's Pride brand.
It takes much longer than oats to cook; 45 mins, but I prefer the plump meatiness it offers. After cooking, it doubles in yield. 1/2 cup will yield you 1 cup cooked, which is one portion for me.
After cooking the barley, I poured some warm chocolate milk, made with Chief Brand cocoa powder over it. Garnished with dates, banana slices and homemade granola! Not only healthy but yummy too and naturally sweetened. My husband tasted it and said it was too sweet, but there is no sugar I said!

Ingredients

  1. 1/2 cupbarley pearl
  2. 1 1/2 cupswater
  3. 1/2 cupmilk
  4. 1/2 tbspcocoa powder
  5. 4dates
  6. 1banana sliced
  7. 1/4 cupgranola (craisins, pumpkin seeds, nuts, coconut chips)
  8. 1 tspcinnamon

Steps

  1. 1

    Boil barley in water for 45 mins, until soft and water is absorbed.

  2. 2

    Drain water if there is excess. Set aside.

  3. 3

    In another pan, warm milk and add cocoa powder, stir to dissolve properly.

  4. 4

    Empty barley into cereal bowl and pour chocolate milk over it.

  5. 5

    Sprinkle cinnamon.

  6. 6

    Add on dates, granola and banana slices.
