Ingredients

  • 2 cupsPoha Rice or Flattened   or Chire
  • 2Onions ( chopped)
  • 2Green Chillies (chopped)
  • 2 tablespoonsOil
  • 4 tablespoonsPeanuts
  • 1/2 teaspoonMustard Seeds
  • 1/2 teaspoonGinger - (minced)
  • 5Curry leaves
  • 1/2 teaspoonTurmeric Powder
  • to tasteSalt
  • 1 / 2 teaspoonCoriander Powder
  • 1/4 cupCoriander Leaves (chopped)
  • 1 teaspoonLemon juice

  1. 1

    Put the poha in a big colander and rinse it two or three times under running water. Poha should not be mashed.

  2. 2

    Heat oil in a pan, add Peanuts, fry until light brown and crunchy.Remove Peanuts from pan and keep aside.

  3. 3

    Add minced ginger into the remaining oil, add mustard seeds and when they splutter add curry leaves.Saute for a minute then add chopped onions and green chillies, fry for some times.Add pohe or flattened rice and mix well.

  4. 4

    Add  turmeric powder, coriander powder and salt. Mix and sauté for two minutes.

  5. 5

    Add fried Peanuts and cook till poha is heated through.Add lemon juice and mix.

  6. 6

    Garnish with chopped coriander leaves and serve hot with a cup of hot ginger tea.
