Ingredients

2 servings
  • 1/2 cup (120 ml)Extra Virgin Olive Oil
  • 1 tbsp (15 ml)Balsamic Vinegar (optional)
  • 3–4 clovespressed or finely grated Garlic
  • 1/3 cup (30 g)finely grated Pecorino Romano or Parmesan cheese
  • 1 tbspfinely minced Fresh Italian parsley
  • 1 tspDried oregano
  • 1/2 tspDried basil
  • 1 pinchRed pepper flakes
  • To tasteFlaky sea salt
  • To tasteFreshly cracked black pepper
  • 1 loafCrusty Italian bread, Ciabatta, or baguette

Steps

    Use a wide, shallow plate for serving.

  2. 2

    Grate garlic directly onto the center of the plate.

  3. 3

    Sprinkle oregano, basil, parsley, red pepper flakes, salt, and pepper over the garlic.

  4. 4

    Generously cover with grated cheese to form a visible layer.

  5. 5

    Slowly pour olive oil over the herbs and cheese. Dot balsamic vinegar around the plate if using.

  6. 6

    Let the oil sit for 10–15 minutes to allow flavors to meld.

  7. 7

    Warm bread in a 175°C (350°F) oven for 5 minutes before serving.

  8. 8

    Serve bread alongside the dipping oil and enjoy.

Tips

Before serving, warm the bread to get the crust crackly and the inside soft, allowing it to absorb the flavors of the oil.
