Ingredients

  • Aubergine tomatoes chilli Start by roasting the , , on the gas stove
  • brinjal When the gets black in colour and the skin tends to wrinkle and split its ready
  • Tomatoes are perfectly roasted when the skin breaks and falls apart
  • onion chilli ginger Puree the , and into a fine paste.

Steps

    Smash the garlic and chop it fine

  2. 2

    Puree the tomatoes into a lumpy paste

  3. 3

    Add oil and make it come to high heat

  4. 4

    Add spices-cumin,mustard,dry chilli,bayleaf,onion seeds,coriander seeds

  5. 5

    Add onion-ginger-garlic paste and sauté for 5 min

  6. 6

    Then add tomato paste and sauté for another 2 min

  7. 7

    Add rest of the spices and cook on low heat now for a good 10min.

  8. 8

    Garnish with fresh chopped coriander and serve hot with phulka roti
