Ingredients

  1. 4Potatoes , medium sized
  2. 2Onion
  3. 4Tomato , organic small sized
  4. 1 inchGinger - piece
  5. 2Green Chilli
  6. a bunchCoriander
  7. 1 tablespoonFenugreek Dried Leaves
  8. 2 tablespoonOil-(I prefer canola oil because of its neutral taste and omega acid content)

Steps

    Garlic-5,6 cloves, this is going to give it the village style dhaba taste

  2. 2

    Spices

  3. 3

    Cumin-1 teaspoon

  4. 4

    Mustard-1 teaspoon

  5. 5

    Dry Red Chilli-3/4teaspoon

  6. 6

    Coriander Powder-2 teaspoon

  7. 7

    Turmeric-1 teaspoon

  8. 8

    Black Pepper-1/2teaspoon

  9. 9

    Red Chill Powder-1 teaspoon

  10. 10

    Dry Mango Powder(can use lemon)-3/4 teaspoon

    Salt to taste

    Start the preparation by washing you potatoes, tomatoes,onion,ginger,garlic,chilli,coriander and keep aside

  13. 13

    Then puree the onion, ginger,garlic and chilli in one round and tomato in the other;keep aside

  14. 14

    Now take a pan add, oil and let it come to high heat

  15. 15

    Add cumin and mustard seeds and the moment they start to crackle add onion paste that you made in first round, sauté for 3min

  16. 16

    Next add tomato gravy and sauté for another 2min on high heat

  17. 17

    Next add remaining spices and cook for 2min or so till the oil starts to leave the pan

  18. 18

    Add potatoes cut in cubes along with 2 cups of water and mix it in the gravy

  19. 19

    Transfer the ingredients to a pressure cooker and cook in steam for 2-3 whistles

  20. 20

    Add dried crushed fenugreek seeds and sauté for a min or so

  21. 21

    Serve hot with bread of your choice
