Garlic-5,6 cloves, this is going to give it the village style dhaba taste

Dry Red Chilli-3/4teaspoon

Dry Mango Powder(can use lemon)-3/4 teaspoon

Start the preparation by washing you potatoes, tomatoes,onion,ginger,garlic,chilli,coriander and keep aside

Then puree the onion, ginger,garlic and chilli in one round and tomato in the other;keep aside

Now take a pan add, oil and let it come to high heat

Add cumin and mustard seeds and the moment they start to crackle add onion paste that you made in first round, sauté for 3min

Next add tomato gravy and sauté for another 2min on high heat

Next add remaining spices and cook for 2min or so till the oil starts to leave the pan

Add potatoes cut in cubes along with 2 cups of water and mix it in the gravy

Transfer the ingredients to a pressure cooker and cook in steam for 2-3 whistles

Add dried crushed fenugreek seeds and sauté for a min or so

Serve hot with bread of your choice
