Ingredients

  1. 1 tbsp.vegetable oil
  2. 1 cupgreen onions
  3. 2 clovesminced garlic
  4. 1minced jalapeno
  5. 1 tsp.cumin
  6. 32 oz.chicken broth
  7. 1 lb.chicken
  8. 1 1/2avocado
  9. 3 tbsplime juice
  10. 1/3 cupcilantro
  11. Monterey jack cheese
  12. diced Roma tomatoes for topping

Steps

  1. 1

    Simmer chicken, vegetable oil, green onions, garlic, jalapeno, cumin, broth

  2. 2

    Let cool then shred

  3. 3

    Blend broth mix, avocados, lime juice, cilantro

  4. 4

    Mix in chicken

  5. 5

    Top with cheese and tomatoes and tortilla chips
