Ingredients

10-serving
  • 11/2 cupsAll purpose flour (APF)
  • 11/2milk cups whole at room temperature
  • 1 cupdates (deseeded)
  • 1/4 cupwalnuts chopped
  • 2 tbspsalmond cashew-nut and powder
  • raisins 1/4 cup
  • 1 tspvanilla bean powder
  • 5 tbspsbutter at room temperature or oil
  • 1/2 cupbrown sugar
  • 2 tspsbaking powder
  • 1/2 tspnutmeg cinnamon powder or powder (optional)

Steps

  1. 1

    Soak dates in milk for 15-20 mins and grind into paste

  2. 2

    In a bowl, add butter, dates-milk mix, nuts powder, vanilla powder, sugar and whisk it

  3. 3

    Sieve APF and baking powder and add it into wet ingredients slowly whisking with a hand blender

  4. 4

    Fold the batter with walnuts and raisins

  5. 5

    In a 350F or 180 C preheated oven, pour the batter into 9" round cake tin or loaf pan and bake it for 20 mins at 180 C and then 150C for another 10-15 mins till the cake tester comes out clean.

  6. 6

    Cake tip: Always keep the cake pan/tin in the middle of the oven to avoid the cake from sinking in the middle.
