Smoked Salmon Buddha Bowl

Oh the Buddha bowl, it is my favorite. This one has salad as a base and smoked salmon with crackers to help fill Michael up. I use either salad or a grain as a base for a budda bowl and then use whatever I have in my fridge for veggies and pick something for protein. I'll top it off with some sort of dressing. Today it was lemon juice, olive oil, and himalayan salt.

Preheat oven to 400 degrees farenheit. Place broccoli florets on a baking sheet and drizzle with olive oil and generously shake garlic powder over the florets. Roast in the oven for about 15-20 mins until some of the edges start to brown.

Place about 1 cup of spinach on each plate. In sections add all of the ingredients above as seen in photo.

Drizzle with olive oil, lemon juice, and salt.
