Super quick, tasty and healthy dinner, which can be made even faster if you buy pre spiralised courgette.

Cover a baking tray with foil and spray with oil. Add tomatoes and slices of pineapple. Spray with oil, add salt and pepper to taste. Pop in oven at around 200 degrees centigrade.

While tomatoes and pineapple are cooking, Put the prawns in a large hot frying pan with a little water (however much covers the base of your large pan), some chopped basil and the pesto. Spiralise a couple of courgettes (or cheat and buy pre spiralised). When most of the water has gone and the prawns are cooked add the courgette. Mix thoroughly, hopefully by this time the tomatoes and pineapple look cooked. If so, remove from the oven and add to the mix. It's ready to eat!
