Beerakai tokku pachadi (Ridge gourd Peel chutney)

This chutney is straight from my grand mom's kitchen. Whenever she prepares Ridge gourd curry, without wasting peel, she will prepare this healthy chutney. With minimal ingredients it is very easy to prepare. We people are using mixer grinders for these chutneys. My grand ma still prepares in mortar pestle. And donno what the difference, this taste is an epic.
Every vegetable peel will have more nutrients. So I will always try to do some chutney or dosa with this ridge gourd peel. This goes well with hot rice and ghee or idly or dosa.

Wash peel thoroughly and keep in colander to drain of excess water.

In a pan, saute green chillies, garlic pods, coriander seeds and cumin seeds.

Keep this aside and now fry peel in one spoon of oil, until soft.

Remove this and fry a chopped tomato until mushy.

Tomato is optional. We can grind directly withou tomato. It will be in coarse texture.

Cool all the things and grind them with salt in mixer grinder. Adjust salt.

Remove to a serving bowl and serve with hot rice and ghee.
