Ingredients

5-6 people
  • 1 cuppumpkin seeds, roasted
  • 1 cuprolled oats
  • 1/2 cupdates, softened and pitted
  • 1/2 cuppeanut butter
  • 1/4 cupdried apricots, chopped
  • 1/4 cupraisins
  • 2 tbspshredded coconut
  • 1 tspcinnamon
  • 1/4 cupchocolate chips
  • 1 pinchsalt

Steps

    Mix the dates and peanut butter together until they form a sticky mixture.

    Add the oats, pumpkin seeds, dried apricots, raisins, coconut, cinnamon, salt, and chocolate chips.

    Mix until all ingredients are evenly combined.

  4. 4

    Press the mixture firmly into a lined container.

  5. 5

    Cover and refrigerate for at least 2 hours. For a firmer texture, refrigerate overnight.

    Cut into bars and serve. Store in your refrigerator.

Tips

• Press the mixture down firmly into the container so the bars hold together better.

• Refrigerating overnight helps create a firmer, less crumbly texture.

• If the mixture feels too dry, add a little more peanut butter or a small amount of honey/maple syrup.

• If the mixture feels too soft, add a little more oats.

• Chop the dried fruit into small pieces so it spreads evenly through the bars.

• For a smoother texture, lightly crush some of the pumpkin seeds before mixing.
