Whisk all the ingredients together until the batter is smooth and well combined.

Fill the paper liners, leaving about 1 cm (½ inch) of space at the top.

Lightly grease a knife and cut a + on top of each cupcake to help create its signature crack. Sprinkle with sesame seeds.

Bake in a preheated 210°C (410°F) oven for 10 minutes to help the cakes develop their signature domed tops. (I baked mine at 230°C (445°F) for the first 10 minutes.) Then reduce the temperature to 180°C (355°F) and bake for about 10 more minutes, or until cooked through. The total baking time may vary depending on your oven. If your oven has a fan, use the fan setting.
