Brad's egg in a hole

When I saw this weeks apron challenge ingredient was eggs, the first thing that came to mind was this simple dish. Egg in a hole. This is something that my grandmother would make me when I was recovering from an illness. A simple dish. Egg, bread, salt, pepper, and butter. "It will get your guts goin' again " she would always say. This is me over complicating something that is fine on its own. A cross between avocado toast and eggs Benedict. Served with an arugula mustard vinaigrette salad. Hope you enjoy.

Heat a heavy skillet on low heat. I used about a 1.5 setting. I prefer a cast iron. Or a good skillet that toasts well.

Depending on appetite, plan on 1 to 2 pieces of toast per serving. Place bread on a cutting board. Find a drinking glass that is the correct size to make a hole in the bread but still leave a little border. Cut out center of bread and remove. Use for a different purpose.

Slice tomato super thin crossways. Lay on a plate and season with salt and pepper. Set aside. Prepare avocado, set aside.

Mix arugula ingredients in a bowl. Set aside in refrigerator.

When pan is hot, add a dab of butter and spread out. Lay bread in the pan. Let toast until it is golden brown on the bottom. Flip bread. Immediately Crack an egg into each hole. Turn temperature up to about 2.5. Drop a 1/4 tsp water on the pan and cover with a lid. I let my egg cook to sunny-side up. Cook egg however desired. When done, remove to serving plates. Season with a pinch of salt and pepper.

Turn pan up to 3. Lay 1/4 cup or so of shredded cheese directly on pan. Top with 4 oz of ham and let fry until cheese starts to brown. This is per serving, per piece of toast. Once it starts to brown, fold over like an omelet. Let cook a minute then flip and let other side brown. When done, remove to top of egg in a hole on the serving plate.

Top with seasoned tomatoes, avocado slices, hollandaise sauce, smoked paprika, and garnish with chives.

Cut in half and serve with arugula salad. Enjoy.
