Beat the egg yolk, sugar and vanilla paste until thick, pale and fluffy. Set aside.

In a separate bowl, beat butter, margarine and condensed milk until light, pale and creamy.

To make chocolate paste, In the separate bowl mix cocoa powder, hot water and chocolate paste together and set aside.

Gently fold the whipped egg yolk mixture into the butter mixture using a spatula until well combined. Take your time as both mixture are similar in colour so make sure it well combined.

Sift in flour, corn flour and milk powder and fold gently until no dry ingredients remain.

Divide the batter into three equal portions. It’s about 420 g each portion Stir the chocolate paste into one portion.

Pour each batter into a 24 cm square baking pan lined with baking paper.

Bake at 180ºC for about 25 minutes or until cooked through.

Once cooled, spread strawberry jam over yellow layer, place the chocolate layer on top, spread another strawberry jam, then finish with the remaining yellow layer.

Cut the cake into 12 equal sizes and enjoy
Tips
* Beat the butter until it becomes very light and fluffy. This helps create a soft, tender cake.
* Beat the egg yolks until they reach the ribbon stage—they should fall slowly from the whisk and leave a visible trail.
* Fold the egg mixture and butter mixture together thoroughly. Since they are similar in colour, it’s easy to miss unmixed butter. If not fully incorporated, the baked cake may develop a dense, rubbery layer caused by separated butter.
