Banana Fritters are a traditional Bengali sweet fritters popularly known as Kolar Bora in Bengali and a great way to use over ripe bananas.It is flavored with fennel seeds and cardamom powder. These fritters are made by mashing ripe bananas , mixing them with flour, semolina, sugar or jaggery, grated coconut and deep frying them until golden and crispy.These banana fritters are an excellent evening snack idea and relished with a cup of tea or coffee.

Ingredients

Prep Time : 20 minutes. Cook Time : 15 minutes

  • 2ripe bananas
  • 1/2 cupall purpose flour
  • 1/4 cupwhole wheat flour
  • 2 tbspsuji (semolina)
  • 1/2 cupsugar or as needed
  • 1 pinchsalt
  • 1/2 cupcoconut grated
  • 1/4 cupmilk
  • 2 tbspmilk powder
  • 1/2 tspfennel seeds and 2 cardamoms powder for flavouring
  • 1/2 tspbaking powder
  • 1 tspghee
  • 1 cuprefined oil for deep frying

Steps

Prep Time : 20 minutes. Cook Time : 15 minutes

    Peel, grate and mash the bananas smoothly in a mixing bowl. Add sugar, a pinch of salt and mix till well combined. Here grated jaggery may also be used in place of sugar.

    Add both the flours gradually as needed. Now add semolina or rice flour to make the fritters crispy.Add grated coconut,milk and milk powder, fennel seeds, cardamom powder, 1 tsp ghee and mix all well to form a thick batter. Add baking powder and whisk till light and airy.

    Heat oil in a deep pan or wok over medium to low heat.Drop 1 tablespoon of the batter into hot oil. Fry in batches until deep golden brown on all sides, then drain excess oil on paper towels.

Tips

Any variety of ripe banana may be used but extra ripe bananas work best for this recipe. Make sure you do not fry the fritters in high heat or else, it will brown up outside and remain soggy inside.Whisk the batter thoroughly to make it light and airy before frying .Rest the batter for 20 minutes before frying .Adding grated coconut induces nice flavour and bite to the fritters.Adding semolina or rice flour helps to make the crust crispy.
