Oat Fiber Toast (no carb microwave bread)

I make this when I want a brunch quality loaded toast for breakfast, but also wish my toast base had 15-17g protein for the same energy value as bread, to keep me full until my next meal.
This recipe uses a mix of oat fiber and whole psyllium husks to provide structure, egg whites and yogurt for protein, and seasonings for flavour. I cook it in a microwave, then toast l, and never miss the bread!

Mix all ingredients well. Use a blender if you have it to ensure everything is combined as smooth as possible.

Pour into a glass microwave-safe dish (preferably glass) and let stand for 2 minutes.

Microwave for 2–3 minutes until the center is just set.

Toast in a dry pan or sandwich press with parchment paper until browned and crisp.

Serve as toast base or cool and refrigerate up to 3 days. Toast again before serving.

Serve with lots of delicious toppings, like you would use a thick toast of sourdough or an open-faced sandwich

Tips
Use a glass dish for even cooking and ensure toasting for a crispy texture.
