I love roasted veggies. I wanted an alternative to serve with lasagna or pasta marinara instead of a side salad. So I decided upon this dish. I never have any leftover from a meal.

Ingredients

4-6servings
  1. 1 bunchfresh asparagus
  2. 1 pkggrape tomatoes
  3. 3/4 cupfreshly grated parmesan cheese
  4. to tasteItalian blend seasoning
  5. to tastedill weed
  6. to tastecelery seed
  7. to tasteparsley
  8. to tastecoarse sea salt
  9. to tastefresh ground black pepper
  10. 2 tbspolive oil

Cooking Instructions

  1. 1

    Trim the asparagus stalk ends about 2 inches, cut tomatoes in half

  2. 2

    Arrange asparagus and tomatoes on a baking sheet, drizzle with olive oil, sprinkle on seasonings

  3. 3

    Roast in oven at 400° for about 15-20 mins, turn baking sheet for even cooking if necessary, plate for service and enjoy
