Pistou Basil Sauce

A simple herb sauce from Provence, France. It's similar to pesto but no nuts or cheese, so great for people who have nut or lactose allergies, or for when you just want something easy without having to worry about buying pine nuts and cheese.

This is often used to garnish vegetable soups, and it makes an amazing dip for bread, meats, etc. or for garnishing pastas and grilled/steamed veggies.

*note you can use a mortar and pestle if you don't have a food processor.

Makes about 1/2 cup. Keep for 7-10 days in the fridge.

Ingredients

  1. 30-40basil leaves (1 big handful)
  2. 5 sprigsItalian parsley
  3. 1 small clovegarlic, crushed
  4. 5 Tbspolive oil (use less for a thicker, paste-like consistency)
  5. 1/2 tspkosher or sea salt
  6. to tasteblack pepper

    Crush garlic and roughly chop the parsley. Put all ingredients in a food processor (or mortar & pestle).

    Processor until turned into a paste and garlic is completely broken down.

    Store in a small jar in the refrigerator for 7-10 days.

    Use on soups, pastas, salads, grilled veggies and meats, for dipping breads or whatever you think might taste good!
