Milk & Black Tea Kanten

"Kanten (agar)" is a popular ingredient for Wagashi, especially in summer. It looks like jelly but it's made from seaweeds. So it isn't necessary to worry about a protease and we can put any fresh fruits in it! It gets glass like transparency but with a lot of sugar.
I made a check pattern Wagashi with less sugar Kanten blocks of milk and sweet ones of Earl Grey (black tea). It's lovely marriage!

①Put the 150ml of water in a saucepan. ②Add 2g of agar. ③Mix them. Heat it up on a medium flame to boiling. ④Turn down the flame when it boils. Simmer it for 2minuites.

①Add 10g of sugar. ②Mix them on medium flame. ③Add 50ml of milk when the sugar and mix them. ④Turn off the flame.

①Pour the liquid into a mold. ②Remove bubbles. Leave it until it gets hard. ③Cut and divide it into 4×4. ④Lay a sheet of plastic wrap. Put the half of them on the sheet. Leave another half in the mold. Arrange each half in a grid pattern.

①Put the 200ml of tea in a saucepan. ②Add 2g of agar. ③Mix them. Heat it up on a medium flame to boiling. ④Turn down the flame when it boils. Simmer it for 2minuites.

①Add 100g of granulated sugar. ② Mix them on medium flame. ③Turn down the flame and simmer it for 1minuite. ④Skim off the scum and turn off the flame.

①Pour the tea Kanten liquid into a mold to a little blow from the top of Milk kanten blocks. Leave it until it getting hard. (But do not wait that it becomes hard completely.) ②Put the another half of milk Kanten blocks on the tea kantan. ③Pour the tea kanten liquid into a mold to the same level of the milk kanten blocks. ④Leave it until it getting hard. *But do not wait that it becomes hard completely.

①Put fan shaped kiwifruits. ②Pour the tea Kanten liquid until it covers the kiwifruits. ③Leave it until it gets hard completely. ④Unmold and cut it. It's to be served and eaten cold !
