Ingredients

Serves 2 servings
  1. 4whole duck confit gizzards
  2. 1 1/8 poundsfresh fava beans (about 500 grams)
  3. 4fresh white onions
  4. 2 tablespoonsduck fat
  5. Salt
  6. Pepper

Steps

  1. 1

    Shell the fava beans and remove their outer skins.

  2. 2

    Melt a little duck fat in a small Dutch oven. Quarter the onions and sauté them in the fat. Add the fava beans along with about 1/2 cup water. Reduce the heat, cover, and cook for about 15 minutes. Watch carefully and add a little more water if needed.

  3. 3

    When the fava beans are tender, add the whole gizzards to the pot. Continue cooking over low heat for another 5 to 10 minutes. Season to taste and enjoy this authentic country dish!
