Contrary to what many believe, confit gizzards aren't just for serving on a bed of salad greens! Recipe prepared with fresh, local products.

Shell the fava beans and remove their outer skins.

Melt a little duck fat in a small Dutch oven. Quarter the onions and sauté them in the fat. Add the fava beans along with about 1/2 cup water. Reduce the heat, cover, and cook for about 15 minutes. Watch carefully and add a little more water if needed.

When the fava beans are tender, add the whole gizzards to the pot. Continue cooking over low heat for another 5 to 10 minutes. Season to taste and enjoy this authentic country dish!
