Ingredients

  1. 150-200 gcourgettini
  2. 50 gmushrooms
  3. 100 gcherry tomatos
  4. 75-100 gkidney beans or lentils
  5. 1-2 tablespoonsnutritional yeast
  6. 2 tablespoonsalpro 'light' cream
  7. 1 teaspoonbalsamico vinigar crème
  8. Pinchsalt&pepper
  9. 1 teaspoonmixed italian herbs
  10. 1-2 slicestoasted bread (optional)

Steps

  1. 1

    1) slice your cherry tomatos in half and mushrooms in slices.

  2. 2

    Rinse (If canned) your beans or lentils very well!

  3. 3

    Then take a mixing bowl and add in your courgettini, mushrooms, cherry tomatos, beans.

  4. 4

    Then add the 2 tablespoons alpro soya cream + balsamico vinigar, salt& pepper + italian herbs. Mix well.

  5. 5

    Last step! Pour your dinner into your plate and top off with the tablespoons nutritional yeast! Last but not least; ENJOY!
