Ingredients

30 minutes
4-6 servings
  1. 1-2chicken breast(s) per person
  2. 1 boxlinguini
  3. 2 tbs.flour
  4. 4 tbs.butter (not salted)
  5. 1 bagspinach
  6. 1 packagegrape tomatoes (slice each in half)
  7. 1& 1/2 cups white wine
  8. 2& 1/2 cups chicken stock
  9. 1palm of dry Italian seasonings
  10. pepper & a little salt to taste
  11. Remember chicken stock has a lot of salt
  12. Pam to spray frying pan, to cook chicken
  13. Parmesan cheese if desired

Steps

30 minutes
  1. 1

    Season chicken breast with pepper and Italian seasonings on both sides. Start pasta water and cook pasta as per package directions.

  2. 2

    Spray a large frying pan with Pam and heat on medium high.

  3. 3

    Pan sear chicken on both sides for around 5 minutes, or until chicken is nicely browned and fully cooked

  4. 4

    While chicken is finishing up, melt butter in microwave, after melting add flour and stir until well mixed with no lumps.

  5. 5

    Remove chicken from pan and set a side. Pour in chicken stock and white wine. Whisk the browned bits into the liquid and heat to boiling.

  6. 6

    Add spinach and tomatoes, then whisk in rue (butter flour) let thicken over heat until it coats a spoon or desired thickness.

  7. 7

    Add Chicken back to pan to re-warm and sauce up.

  8. 8

    Serve Chicken and sauce over pasta, top with Parmesan cheese if desired.
