Ingredients

4 servings
  • Prepared kofta
  • Spices: 1 teaspoon each of:
  • Salt
  • Black pepper
  • Ground cardamom
  • Meat seasoning
  • Grill seasoning (if available)
  • Mixed spice blend with garlic powder, onion, and ginger
  • 2 tablespoonsunroasted sesame seeds (about 18 grams)
  • You’ll need: charcoal, aluminum foil, and oil to give a grilled flavor

Steps

    Season the kofta with the listed spices and shape into finger-sized pieces.

    Grease a baking dish with vegetable ghee, arrange the kofta fingers, press them gently, and sprinkle with sesame seeds.

  3. 3

    Bake in the center of the oven at 350°F (180°C) for 20 minutes, then broil briefly to brown the tops.

  4. 4

    Taste, then light a piece of charcoal, place it on aluminum foil with a drop of oil, and set it in the dish with the kofta. Cover and let sit for 10 minutes to infuse a smoky flavor.

  5. 5

    Remove the charcoal and serve with bread, salads, and yogurt.
