Vegan blackberry skillet cobbler

Ingredients

  1. 5 cupsfresh blackberries (or fruit of choice)
  2. 1/2 cupsugar
  3. 1/2fresh lemon juice squeezed
  4. Topping:
  5. 1 cupbrown sugar
  6. 1 cupwhole oats
  7. 1 cupflour (coconut for GF)
  8. 1/2 cupcoconut oil melted
  9. 1 cupchopped nuts (pecans or walnuts)

Cooking Instructions

    Great for grilling or oven. Start with a 10 inch wide iron skillet. Melt 1/2 cup of coconut oil in skillet on stove top or grill. Reserve melted oil and set aside. Keep remaining oil residue in skillet. Remove from heat to safe surface.

    In a bowl add fruit/berries and 1/2 cup sugar, lemon juice, and stir. Pour into hot skillet.

    Topping: pour oats, flour, brown sugar, chopped nuts and melted oil. Toss until evenly mixed together and then spread over top of berry mixture.

    Bake or grill at 400 degrees for about 30 minutes until golden brown on top! Serve with vegan coconut milk ice cream!
