Fresh blackberries are my favorite fruit. This cobbler has a rich buttery crust, and is perfect with a scoop of vanilla bean ice cream

Ingredients

  1. 1 cup (2 sticks)salted butter, cut into cubes, cold
  2. 2 1/2 cupsall purpose flour
  3. 1/2 tspsalt
  4. 2 tbspsugar
  5. 1/2 cupcold water (may need a little more)
  6. 3 cupsfresh blackberries
  7. 1 cupfresh strawberries, quartered
  8. 1 cuplight brown sugar (can substitute white)
  9. 1 tbsporange juice
  10. Melted butter

Cooking Instructions

  1. 1

Preheat the oven to 375 f

  2. 2

Combine flour, sugar and salt in a large mixing bowl

  3. 3

Add butter and work mixture with your hands until it is the texture of wet sand. Add 1/2 cup cold water and mix until mixture comes together. If the dough is still too dry add cold water 1 teaspoon at a time until it comes together. Knead dough for about a minute until it is smooth

  4. 4

Shape dough into a disk and wrap tightly in Saran Wrap. Refrigerate for at least an hour

  5. 5

To make the filling, add berries, sugar, and orange juice to a large heavy bottomed sauce pan, you may need to adjust the amount of sugar depending on how sweet your berries are

  6. 6

Cook on medium for about 10 minutes until the berries have cooked down and the liquid is a thin syrup. Allow to cool.

  7. 7

Separate the dough in half. Roll dough into two 11x11 squares on a floured surface. Press one square into a greased 9x9 pan on the bottom and up the sides

  8. 8

Pour in the filling. Top with remaining dough square. Fold and pinch edges to make a crust.

  9. 9

Make several slits in the top of the crust. Brush top with melted butter

  10. 10

Bake at 375 f until golden on top, about 30 minutes.

  11. 11

    Enjoy!
