Asian inspired cabbage rolls

Ingredients

8 rolls
  1. 1 headcabbage
  2. 1 tbsolive oil, plus more for baking dish
  3. 1 tspminced garlic
  4. 1 tspminced ginger
  5. 1large carrot shredded
  6. 4fried eggs chopped
  7. 1zucchini finely chopped
  8. 1/4 cgreen onion chopped
  9. Soy sauce for dipping

Cooking Instructions

    Preheat oven to 400°F

    Rinse 8 cabbage leaves,

  3. 3

    Boil for 3 minutes

  4. 4

    Transfer to bowl of ice water

  5. 5

    Next dry with paper towels and set aside

  6. 6

    Heat olive oil, garlic, and ginger in a skillet until garlic has browned

  7. 7

    Add carrot, egg, and zucchini; frying over medium heat for 2 minutes

  8. 8

    Remove from heat and stir in green onion.

  9. 9

    Lay leaves flat and divide mixture between leaves evenly

  10. 10

    Slowly roll cabbage up while also folding ends inward

  11. 11

    Place rolls in an oiled baking dish

  12. 12

    Lightly brush oil over cabbage tops

  13. 13

    Bake for 20-25 minutes

  14. 14

    Serve warm with soy sauce
