
Tuna parmesan
I usually double the dressing recipe because I like plenty!
Cooking Instructions

Preheat oven to 450°. In a small bowl, whisk together lemon juice, lemon est, oil and S&P. Cut lemons into wedges and set aside.

Cut off woody base of asparagus and place in a single layer in a shallow baking pan. Drizzle with 2T dressing. Roast in oven for 6-8 minutes, uncovered. Depending on how thick the asparagus is will determine roasting time. You don't want to overcook this.

Pat the tuna dry and sprinkle both sides with S&P. In a large skillet, heat 1T of dressing over medium heat. Add the tuna and cook for 8-12 minutes until browned. Internal temp should be 145°

Plate the tuna and asparagus and drizzle the rest of the dressing over both. Top with parmesan cheese shavings. You can put this on mixed greens if desired.
