Ingredients

  1. 1 cupBasmati rice, cooked
  2. 1medium size broccoli, cut into florets
  3. 1onion, sliced
  4. 1" ginger, sliced
  5. 2-3 clovesgarlic, sliced
  6. 2-3fresh red chilies, slit
  7. 2 tbsp.oil
  8. 1 tbsp.ghee
  9. 2bay leaves
  10. 1" cinnamon stick
  11. 2-3green cardamoms
  12. 4-5cloves
  13. 1 tsp.shahjeera / cumin seeds
  14. to tastesalt
  15. 1 tsp.garam masala powder
  16. 2 tbsp.mint leaves, chopped
  17. 2 tbsp.coriander leaves, chopped

Steps

  1. 1

    Steam the broccoli till it becomes slightly soft. Heat 1 tbsp. oil in a pan and stir fry it till light brown. Keep aside.

    Heat remaining oil and ghee and temper with bay leaves, shahjeera, cinnamon, cardamoms and cloves. Saute for a few seconds.

    Add the onion, ginger, garlic and chilies. Stir fry till light brown.

    Now add the broccoli, salt and garam masala powder.

    Mix everything well and add the rice. Continue to saute for 1-2 minutes.

    When done, add the coriander and mint leaves. Give it a stir and serve with raita and papad.
