Cut the pork into cubes, rinse, and place in a pot with salt, 1 onion, and the head of garlic in 12 cups water (about 3 liters).

Once it comes to a boil, cook for 1 hour, then add the oregano and bay leaves.

When the meat is very tender, blend the guajillo chiles with 2 cups of the broth and 2 more garlic cloves. Add this mixture to the pot and simmer a little longer. Serve topped with chopped onion and cilantro.

Serve with warm tortillas and plenty of spicy salsa.
