Ingredients

Serves 6 servings
  1. 4 1/2 lbspork leg (about 2 kg)
  2. 4guajillo chiles, boiled in 2 cups of pork broth
  3. 1onion
  4. 1 headgarlic
  5. 1 tablespoonoregano
  6. bay leaves, to taste
  7. as neededchopped cilantro,
  8. as neededchopped onion,
  9. chile de árbol salsa, to taste

    Cut the pork into cubes, rinse, and place in a pot with salt, 1 onion, and the head of garlic in 12 cups water (about 3 liters).

  2. 2

    Once it comes to a boil, cook for 1 hour, then add the oregano and bay leaves.

  3. 3

    When the meat is very tender, blend the guajillo chiles with 2 cups of the broth and 2 more garlic cloves. Add this mixture to the pot and simmer a little longer. Serve topped with chopped onion and cilantro.

    Serve with warm tortillas and plenty of spicy salsa.
