  1. 3 kgIrish Potatoes
  2. 2 cupsVeg oil
  3. 8eggs
  4. 1/2 cupshredded mozarilla cheese (optional)
  5. 1/2 cupshredded Permesan cheese (optional)
  6. 1cksp cooking cream
  7. 1cksp milk
  8. 1big yellow bell pepper diced
  9. 1big green bell pepper diced
  10. 1big red bell pepper diced
  11. 1chilling bell pepper diced
  12. 1 tspblack pepper
  13. 1bulb onions
  14. 3 strandspring onions diced
  15. to tastesalt

    Peel Irish potatoes and slice in desired shape I went for round, once you done, wash and toss in a little salt and toss the whole potatoes together and set to drain the remaining water

  2. 2

    Preheat oven 220degree and grease the baking pan

  3. 3

    Heat up a frying pan and add vegetable oil, once oil is hot start frying your potatoes and drain in a paper towel

  4. 4

    Break eggs in a different bowl, add cooking cream and milk then whisk everything together; add little salt, pour in the diced yellow bell pepper, green bell pepper, chilli, red bell pepper, spring onions and onions, whisk everything together and set aside

  5. 5

    Add the fried potatoes into the whisked egg mixture and mix in together; pour into the grease baking dish, add shredded mozarilla and permasan cheese and bake for 20mins tops

  6. 6

    Serve once you are done
