Ingredients

2 people
  1. 4 packetstwo minute noodles(instant noodles)
  2. 4boiled eggs, halved
  3. 50 gspinach or baby pak choy
  4. 2 tablespoonssoy sauce
  5. 1 tablespoonsesame oil
  6. 2 tablespoonshoisin sauce
  7. 1fresh chili, finely chopped
  8. 1 teaspoonchili flakes for extra heat
  9. 1 knobginger, crushed
  10. 4garlic cloves
  11. 10dried porcini mushrooms or any other dried mushrooms
  12. 1 tablespoonrice wine vinegar
  13. 1lime, juiced
  14. 1 sheetnori(seaweed sheet)
  15. 500 mlwater to boil noodles
  16. 1 cupwater to hydrate mushrooms

    Boil the noodles in one large bowl for about 5-10 minutes. Set aside once done.

  2. 2

    Hydrate the mushrooms in one cup of boiling water. Set aside to soften and hydrate.

  3. 3

    In a small bowl, mix together the hoisin sauce, sesame oil, soy sauce and rice wine vinegar and lime juice, stir to combine.

  4. 4

    In two separate serving bowls, assemble the ginger, garlic and fresh chili at the bottom of each bowl. Add the mixture in step 3 then add the noodles. Add the spinach or pak choy along with the chili flakes, boiled halved eggs then top with nori sheets.

    Serve hot and enjoy the healing benefits! :)
