In a pot, combine the water, 1 onion, salt, 1 clove of garlic, bay leaf, and the textured soy protein. Bring to a boil and cook for 10 minutes. Remove the onion, garlic, and bay leaf, then drain the soy protein well.

Soak the chiles in hot water until they soften. Blend them with onion, garlic, vinegar, salt, and spices until smooth.

Place the soy protein in a bowl and pour the sauce over it, straining it through a sieve first. Let it marinate for 30 minutes.

Heat oil in a skillet and sauté a few onion slices for a couple of minutes. Add the soy protein and cook for about 5 minutes. Adjust salt to taste.

Add the pineapple, mix well, and cook for a couple more minutes. Serve and garnish with chopped onion, cilantro, lime, and salsa.
