Place the chopped beef foot in a bowl.

Add the onion, oregano, apple cider vinegar, and salt to taste. Mix everything well.

Optionally, add the can of pickled peppers or just the vinegar for extra flavor.

Let it rest for a few minutes.

On a tostada, spread a little sour cream, add some of the beef foot mixture, garnish with lettuce or cabbage, and serve with salsa to taste.
