Kibbeh with Meat – Absolutely Delicious

Soak the bulgur, clean it, then drain and squeeze out excess water. Grind it together with the ground beef using a meat grinder to make the kibbeh mixture. Be sure to use lean beef with no fat.

Add the onions to a pan with a little vegetable oil (I sometimes use olive oil, but that's optional). Sauté the onions, then add all the spices listed above and cook until the onions are golden brown.

Add the pine nuts and toast them on one side of the pan.

Next, add the parsley, green onions, and fresh mint (all finely chopped except for the mint, which should be left whole to avoid bitterness). Then add the ground beef and sauté everything together.

Add salt, continue to cook until everything is browned, then transfer the mixture to a plate.

Prepare the kibbeh dough by adding a little cold water (about 1 small cup) and a pinch of salt. Knead by hand until you can shape it into balls as shown in the picture. Wet your hands with water, shape the dough, and fill with the meat mixture.

Arrange the kibbeh on a tray, then fry in hot oil until golden brown.

Serve with yogurt and cucumber salad.
