Beef rib stew is one of our favorite foods in my little family, especially my husband. The stew is little bit spicy, savory, and sweet. In Indonesian Cuisine, we have a secret ingredient that maybe doesn't exist in other country, sweet soy sauce or we called it "kecap manis". This ingredient, basically similar with soy sauce but in its making, the producer adds sugar so we call it sweet soy sauce. This sauce is an important seasoning in the most Indonesian dishes.

  • 500 gbeef rib
  • 3-4potatoes
  • 100 mlsweet soy sauce
  • 1 tspsalt
  • 1 tspwhite pepper powder
  • 1 tspcoriander powder
  • 1 tspsugar
  • 1 tspnutmeg powder
  • 6 clovesgarlic
  • 8 piecesspring onions (bawang merah)
  • 2chilies
  • 1bayleaf
  • 1galangal
  • 2lime leaves
  • 1 stalklemongrass
  • 2 tspolive oil
  • 200 mlwater

    Seasoning paste: crush garlics, spring onions, chilies, and salt until mix well.

  2. 2

    Put olive oil and cook the seasoning paste until the color changes and fragrant.

  3. 3

    Add water and stir well. Put the other ingredients and cook for 3 minutes.

  4. 4

    After that, put in the beef rib and potatoes. Cook until the beef rib and potatoes are soft (check with fork or knife).

  5. 5

    Serve with fried onion on the top.

I never tried sweet soy sauce..... can you add sugar to regular soy sauce?
