Ingredients

  1. 9 ozMexican sausage (longaniza) (about 250 grams)
  2. 3 cupszucchini, diced (about 400 grams)
  3. 1 cuponion, finely chopped (about 150 grams)
  4. 1 cuptomato, chopped (about 180 grams)
  5. 1 cancorn kernels or kernels from 1 ear of fresh sweet corn (about 1 cup or 165 grams)
  6. 1 tablespoonsalt

Steps

30 minutes
  1. 1

    Finely chop the onion, zucchini, and tomato.

    In a large skillet, cook the Mexican sausage and onion together. Let the sausage release its fat and use it to sauté the onion.

    Once the sausage and onion are well cooked, add the zucchini.

    Stir to combine, then add the tomato.

    Add salt to taste and your choice of herbs.

    Finally, add the corn kernels.
