Dry pasta with tomato sauce

Sauté at medium heat the onions and garlic until golden in colour

Add the carrots and brown well

Put the tomatoes in hot water to help remove the skin. Then blend well to make tomato puree

Add the tomato puree into the mixture and add 100 ml water let it boil for 10 mins,, season with salt

Remove from heat and liquidise with a liquidiser

Add some olive oil and the fresh basil and set aside

In a different sauce pan boil 3 litres of water and add salt

Add the pasta (spaghetti)and cook for 5 mins

Drain the pasta off and sprinkle olive oil on it and let it cool

Return the pasta to heat and add the tomato sauce and sprinkle parmesan cheese on it mix well for 2 mins

Serve hot and garnish with two basil leaves
