Fresh Berrie Pavlova

A classic simple dessert , perfect for showcasing the beautiful summer berries. Crisp but also chewy meringue topped with fresh whipped cream and sweet berries.

Ingredients

  1. For Pavlova
  2. 4large egg whtes
  3. 1/8 teaspoonsalt
  4. 1 cupgranulated sugar
  5. 1 teaspoonfresh lemon jupce
  6. ``1 1/2 teaspoons vanilla extract
  7. 2 teaspoonscornstarch
  8. For Filling
  9. 1 cupcold heavy whipping crea
  10. 3 tablespoonsconfectioners sugar
  11. 1 teaspoonvanilla extact
  12. For Topping
  13. Fresh assorted berries
  14. Melted chocolate for drizzeling

Cooking Instructions

  1. 1

    Preheat the oven to 300. Line a baking sheet with parchment paper and draw 12 inch circle on parchment. Turn parchment over so the drawn side is down

    Beat egg whites until foamy

  3. 3

    Add lemon, cornstarch and then beat in sugar a tablespoon at a time until whites are glossy and firm

  4. 4

    Pile onto circle on parchment using the circle as a quide. Using an off set spatula make into a bowl shape

  5. 5

    Bake for 50 to 65 minutes until surface appears dry

  6. 6

    Cool on rac compleatly before carefully peeling off parchment paper

    Make whipped cream

  8. 8

    Beat cream until it holds soft peaks

  9. 9

    Add sugar and vanilla and beat until it holds its shape

  10. 10

    When ready to serve

    Spread whipped cream in center of meramge

  12. 12

    Add fresh berries

  13. 13

    Drizzle with melted chocolate, cut in wedges and serve

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
