  1. 3 Tbspolive oil
  2. 3chicken breasts, sliced
  3. 3bell peppers, sliced
  4. 1onion, sliced
  5. 1 tsppepper
  6. 1 Tbspchili powder
  7. 1 Tbspcumin
  8. 4 clovesgarlic, minced
  9. 4 cupsalmond milk, unsweetened
  10. 4 cupspenne pasta
  11. 1 cuppepper jack cheese, shredded

Cooking Instructions

    Heat oil in a large pot over high heat.

    Add chicken and cook until no pink is visible, then take the chicken out.

    Add the bell peppers, garlic, and onion, cooking until the onion is translucent.

    Add the chicken back to the pot with pepper, chili powder, and cumin, stirring until evenly coated.

    Add the milk and the penne, stirring constantly to prevent any pasta from sticking.

    Cook for about 8-10 minutes until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta.
