Peel the garlic, slice the cloves lengthwise, and remove the green sprout from the center.

Crush the garlic using a garlic press or mortar and pestle, then place the mashed garlic in the mortar.

Add the salt and use the pestle to mash the mixture until smooth and well combined.

Without peeling the cucumber, cut it in half, then slice each half lengthwise.

Use a teaspoon to scrape out and remove the seeds from the cucumber. You’ll end up with 4 "boats." Grate them, and if the cucumber is still watery, squeeze out the excess liquid.

In a large bowl, combine the yogurt and grated cucumber, and mix with a spoon.

Add the remaining ingredients and stir well. Your tzatziki is ready—taste and add a little more salt if needed.
