Finely chop the leek and garlic, and marinate the quails for 24 hours in the refrigerator, covering them with the wine.

Sauté them with a little oil, and once they get some color, add the water and let them boil for 35 minutes, adding the salt and pepper.

To thicken the sauce, add a little flour and mix well, then finish with wine.

In another pot, boil the potatoes well with a vegetable bouillon cube for flavor.
