In a mixer, blend the oils with the sugar. Dissolve the baking soda in the orange juice (it will foam), then add to the mixture. Add the brandy, orange zest, baking powder, cloves, cinnamon, walnuts, and semolina.

Gradually add the flour.

Preheat the oven to 340°F (170°C) with convection. Line a baking sheet with parchment paper. Take pieces of dough about the size of a walnut and shape them. Bake for about 20-25 minutes, until golden brown.

Prepare the syrup by boiling all the ingredients for exactly 5 minutes after it starts to boil.

Let the cookies cool. Remove the parchment paper and leave the cookies in the pan. Pour the hot syrup over the cookies. After about 1 hour, when they have absorbed the syrup, turn them over.

The next day, place the cookies on a platter and garnish with 1/2 cup ground walnuts mixed with cloves and cinnamon.
