Mix the flour, 1 cup (120 grams) powdered sugar, butter, and egg yolks to make the dough.

Wrap the dough in aluminum foil and refrigerate for 30 minutes.

Preheat the oven to 350°F (180°C). Divide the dough into 4 pieces. Roll out each piece and cut out shapes using cookie cutters. Place the cookies on a baking sheet lined with parchment paper.

Bake for 10 minutes.

Sandwich the cookies together with your choice of jam and dust the tops with powdered sugar.
