  • 2 tablespoonhoney
  • 1 tablespoonolive oil
  • 1 tablespoonsoy sauce
  • 1/2 tspground ginger, minced
  • 1 tsppepper
  • 1yellow squash, thinly sliced
  • 1/2red onion, diced
  • 2 clovesgarlic, minced
  • 1red bell pepper, diced
  • 8 ozasparagus spears, chopped
  • 2salmon fillets

    Preheat oven to 425°F.

    In a small bowl, mix together the honey, soy sauce, ginger, garlic, and pepper until combined. Set aside.

  3. 3

    On a parchment-lined baking pan, arrange the yellow squash, red onion, bell pepper, asparagus, and salmon fillets in an even layer.

  4. 4

    Drizzle the oil on the yellow squash, red onion, bell pepper, and asparagus, and season with pepper.

  5. 5

    Pour the honey ginger sauce over the salmon fillets.

  6. 6

    Bake for 15 minutes, until the salmon is cooked and the veggies have softened slightly.
