Sauté the meat on all sides in the oil in a deep pot to seal it. Add the onion until it colors, along with the peppercorns (frying them releases all their aromas).

Deglaze with the wine and let it boil for 4-5 minutes until the alcohol evaporates.

Add the water and salt.

Cover the pot and lower the heat. Simmer for about 45 minutes until the pork is slightly tender (not fully cooked).

Gradually add the cabbage, stirring to fit it into the pot.

Once it wilts and reduces in volume, add the carrots and potatoes. Mix well, cover, and let cook for another 40-45 minutes until the vegetables are tender and the meat is well cooked.

Check the salt and add the tomato sauce (or paste), paprika, oregano, and lemon juice. Let it cook for another 10-15 minutes to thicken slightly, turn off the heat, and leave the dish on the warm burner until serving time.
