An easy, nutritious sandwich filling which kids will love. Can be used as a lunch box filler too.
Steps

Heat oil in a non-stick pan and saute the onion. Then add the finely chopped tomato and when it has softened add the eggs one at a time and scramble them to a very light and soft consistency. Add salt and pepper.

Do not overheat the mixture. Remove the pan from the stove and keep stirring the mixture to a spreadable consistency.

When the mixture has cooled down spread this onto a slice of bread and cover it with another slice. This can be served as warm or as a cool spread.
