Ingredients

  1. 2large cucumbers, peeled and cut into rough slices
  2. 1large Haas avocado, halved, pitted, and flesh scooped out
  3. 2scallions, green and white parts included, chopped
  4. 2 tablespoonsfresh lime juice
  5. 1/4-1/2 teaspoonssea salt (to taste)
  6. 1/4 teaspoonblack pepper (or to taste)
  7. Mango Salsa
  8. 1 cupAtaulfo mango, cut into 1/2 inch cubes
  9. 1/2 cuptomato, 1/2 inch dice
  10. 1/2 cupshucked corn kernels (raw)
  11. 1/2 cupcilantro, loosely packed and finely chopped
  12. 1 tablespoonolive oil
  13. 1 tablespoonlime juice
  14. to tasteSea salt and black pepper

Steps

  1. 1

    Blend all soup ingredients together in a blender till smooth, adding enough water to achieve a perfectly creamy texture

  2. 2

    Toss the salsa ingredients together in a small bowl.

  3. 3

    Transfer soup to four serving bowls. Top each with a half cup of the mango salsa, and serve.
