Steps

Clean the fish thoroughly and season with salt and pepper (mainly the inside).

Cut the potatoes in large wedges (but not too thick) and spread them in a baking tray.

Cut the onions as you would for a Greek salad and place them on top of the potatoes, all over the baking tray.

Finely chop the parsley spreading it all over the baking tray as well.

Place the fish that you have seasoned with salt and pepper on top, after placing a sprig of parsley in its mouth and belly.

Squeeze the 2 1/2 oranges and cut the half that remains into thin round slices.

Pour the orange juice over the fish and potatoes.

Place the round orange slices on the fish (from head to tail).

Pour a1/2 cup of virgin olive oil over everything.

Bake at 180-200°C for about 45 minutes (depending on the kind of fish that you have).

When it is done, squeeze the lemons, add the mustard (using a blender) and blend until you have a nicely incorporated dressing.

Pour the dressing over everything and serve.
